Mason Jar Caramel Ginger Ice Cream Cake {Gluten Free & Dairy Free}


If you're like me you love the "all in moderation" rule. The last gluten-free ice cream cake recipe that I made was far from moderate and because of that, I found myself eating an entire gluten-free ice cream cake all by myself! As much as I would love to eat ice cream cake for days, it'd be nice to have a smaller version for a one time dessert. That being said, this mason jar ice cream cake recipe is perfect for the summers since it provides dessert for just one or even 2 people!

It's super easy to make and super fun too! All you need is some Dancing Deer Gluten Free Molasses Cookies and some Coconut Bliss Ginger Cookie Caramel Ice Cream! The rest is pretty self explanatory and completely up to you.

If you would like to switch up the flavor of ice cream and cookies then go for it! This recipe is using 2 of my favorite gluten-free products as of late and is simply here to give you some fun ideas. Have fun with this recipe and feel free to share some of your ice cream and cookie combinations that you come up with too!

Ingredients:

  • 1 mason jar

  • 1/2 pint Coconut Bliss Ginger Cookie Caramel Ice Cream

  • 1/4 cup So Delicious Dairy Free Cocowhip

  • Enjoy Life Foods Mini Chocolate Chips for garnish

Directions:

  1. Crumble 1 cookie and place at the bottom of your mason jar for your first layer.

  2. For the second layer, fill with ice cream until about a 1/4 of the jar is full.

  3. For the third layer, crumble 1 cookie and place on top of the ice cream.

  4. For the fourth layer, fill with ice cream until about 1/2 of the jar is full.

  5. For your fifth layer, crumble 1 cookie and place on top of the ice cream.

  6. For the sixth layer, fill with ice cream until about 3/4 of the jar is full.

  7. Top with whipped cream and garnish with Enjoy Life Foods Mini Chocolate Chips. Enjoy!

Again, you can switch the flavor of ice cream or cookie with whatever you want but this combo is definitely delicious. Make sure to check out Dancing Deer Baking Co. for the awesome cookies I used in this recipe!
